1 egg white
1 teaspoon vanilla
1 pound pecan halves
1 cup brown sugar, packed
1 teaspoon salt
1 teaspoon cinnamon
Preheat over to 250 degrees. Beat egg white and vanilla until stiff. Fold in pecans.
In a small bowl, combine brown sugar, salt and cinnamon. Blend into nut mixture. Spread mixture on greased jelly roll pan.
Bake at 250 degrees for about one hour, stirring every 15 minutes.
Makes 6 to 7 cups.
